Flourless Giardiniera Corn Bread Muffins


What you need:

2 Eggs

2 Cups Buttermilk

2 Cups Coarse Ground Corn Meal

1 Jar Marconi Giardiniera (Hot, Mild, or Medium)

1/2 Cup Fresh Corn (Optional)

1 teaspoon baking powder

1 teaspoon baking soda

 

What to do:

Preheat your oven to 425 Degrees

Start off my mixing the Corn Meal, Eggs, Buttermilk, Baking Powder and Soda together in a large mixing bowl or electric mixer.  Mix well to a nice smooth batter.

Grab a sheet of muffin tins and go ahead and grease each one with the oil from the Giardiniera.

Get your mixing bowl full of batter and pour out mixture into each tin. (While still mixing if possible)

 

Once batter is poured, fork into each tin a healthy dose of Giardiniera and Fresh Corn.

Bake in oven for 12-15 minutes or until golden brown.

Enjoy while still hot with butter and honey!
