Another muffin blog…
I love Corn. Corn bread. Corn Dogs. Corn on the Cob. Corn Chowder. When I was discussing making old school homestyle cornbread from scratch, a friend suggested adding Giardiniera to the batter. (Great idea Grace!)
So I got my hands on some good coarse corn meal. Mixed it with Buttermilk and a few eggs, some baking soda and powder and boom! Corn Bread Batter done.
Now, these had no sugar, no flour, no salt, so I was a little worried about the moisture level of how they would come out.
But I figured the Giardiniera would take care of that, and it did. I used Marconi Hot, so they certainly had a kick, especially since I greased the muffin tins with the oil right out of the jar.

This is a great dish if you like corn bread. It’s easy, takes no time at all, and tastes great. be sure to enjoy them right out of the oven with Butter and Honey.
